In the history of Japanese sake, the lowest polishing ratio ever achieved, '7%,' was born in 2009. This brewery newly installed a rice polishing machine and aimed to explore 'how far rice could be polished.' With this idea in mind, we made continuous efforts, starting from 9% to the current 7%. This sake is dedicated to refining the brewing process by suppressing the original sake aroma produced by yeast and accentuating the original flavor of rice. As a result, it has attracted the interest of professionals, leading us to commercialize it under the name 'Zankyo 7.'
