This special limited-edition sake marks the triumphant return of master brewer Yukio Sakata, one of the renowned Noto Toji masters, after a two-year hiatus. Having trained under Masayoshi Hase of Kaiun (one of the legendary “Four Noto Masters”) and serving as Toji at Sogen since 2001 — where he earned six consecutive Gold Medals at the National New Sake Awards — Sakata is regarded as a key figure in preserving and evolving the Noto brewing tradition.
