The concept of this series is “sake crafted for afternoon drinking.” Using “Ipponjime” rice grown in Uonuma, Niigata, the brewery applies 65% flat-polishing and a two-stage brewing method to achieve a balanced sweet-acidic nama genshu expression.
The Japanese subtitle “Owari no Hajimari” (The End of the Beginning) pairs intriguingly with Takachiyo’s philosophy—“We brew not sake, but happiness”—inviting the drinker to reflect: is it an ending, or a beginning? Its light entry and dense expansion express this contradiction beautifully, waiting for the drinker to experience it firsthand.
