This is a special collaboration between Tochigi’s two prestigious breweries, Senkin and HououBiden! Using the heirloom rice Aikoku No.3—once cultivated in Tochigi during the Taisho era and recently revived through the efforts of agricultural schools and the Tochigi Prefectural Agricultural Promotion Office—this sake is part of an “Agricultural Revival Project,” preserving the value of farming and primary industries. Unlike modern sake rice bred for ease of use, the native heirloom Aikoku expresses the raw power of nature and the land. Through their distinct brewing approaches, Senkin and HououBiden have revived this ancient variety, presenting its unique character to today’s sake world. A dreamlike collaboration of phoenix and crane, not to be missed.
