The “Homase” rice used for the first release comes from Hananoka Sake Brewery in Kumamoto Prefecture and is a variety that Senkin had never previously used. Rather than deliberately applying its established brewing style, Senkin carefully approached the unique character of Homase itself, allowing the rice’s distinctive qualities to be faithfully expressed in the finished sake. Immediately after opening, the flavor profile is somewhat restrained, but as the sake comes into contact with air, its aromas and flavors gradually unfold little by little. The character of the sake can even be felt changing from moment to moment, making the evolving tasting experience itself one of its greatest pleasures.

Senkin’s new “Tabimai” series is based on the concept of “rice that has traveled,” with its first release featuring “Homase from Kumamoto Prefecture.” For nearly 20 years, Senkin has remained committed to using rice cultivated in Sakura City, Tochigi Prefecture, specifically selecting fields located along the same water system as the brewery’s brewing water and working closely with local farmers in both rice cultivation and sake production. However, due to the impact of the “Reiwa Rice Crisis,” the number of farmers cultivating brown rice for sake brewing has declined significantly, making it increasingly difficult to secure sufficient quantities using its traditional sources alone. As a result, the brewery decided for the first time to actively incorporate rice from outside Tochigi Prefecture. This led to the creation of the “Tabimai” series, in which rice sent by fellow sake breweries from their respective regions “travels” to Senkin to be brewed, with each glass expressing gratitude toward the local terroir and the producers who cultivated it.

In addition, a portion of the proceeds from this product will be donated to Kumamoto Prefecture to support those affected by the 2026 Kumamoto earthquake. Through sake brewed from rice that has “traveled” from Kumamoto to Tochigi, this special release reconnects the bonds between the land, its producers, and those who enjoy the finished sake.
