Crafted using the traditional four-stage brewing method, the alcohol content is adjusted to 15.5%—a first challenge for Seiryo Brewery in creating a namagenshu at this level—fully drawing out the flavor of the rice. This “Uraraka Rei” Tokubetsu Junmai Namagenshu from the “Seiryo Zen” series is brewed with the theme of the four seasons of its hometown. It uses Matsuyama Mitsui rice from Saijo City in Ehime Prefecture, paired with the EK-1 yeast developed in Ehime, and brewed with soft underground water sourced from Mt. Ishizuchi. While retaining rich umami, it presents a light and smooth mouthfeel with a gentle and elegant aroma. It is recommended to enjoy it well chilled.
The “Seiryo Zen” series is a new line created by Seiryo Brewery under the theme of “hometown.” The label design is inspired by the silhouette of the Ishizuchi mountain range visible from the brewery. Using only rice and water from Saijo City in Ehime Prefecture, it encapsulates the land and its people into each bottle, expressing the charm of local terroir.
