The moromi currently being brewed in collaboration with local farmers is progressing beautifully at the foothill brewery, already releasing gentle and elegant aromas reminiscent of ripe pear. Inspired by the rice harvested during the warm growing season of 2025, the brewery sought to create a sake that balances lustrous sweetness with vibrant organic acidity, resulting in a profile rich in juicy fruit character and layered complexity.
During this brewing season, Mr. Kita and the Tsuboi family, the farmers responsible for cultivating the sake rice, personally participated in the brewing process. For many years, both families primarily grew rice for their own households and relatives. Reflecting on seeing their Akitsuho rice transformed into "S Kaze no Mori" and distributed throughout Japan, Mr. Kita commented, "It feels like a continuation that lingers like an aftertaste, and that makes me very happy." His words express the deep satisfaction of seeing rice he cultivated by hand reach sake enthusiasts far beyond his local community. Through this sake, the culture of Japan's satoyama landscapes and the importance of regional agriculture can be appreciated, preserved, and passed on to future generations.
The star-shaped "Future Sake Degree" emblem printed in the upper left corner of the label is based on a hand-drawn star created by one of the Akitsuho growers, and this release features the version drawn by Mr. Tsuboi. At first glance, it appears to be a shining star, yet it subtly evokes the shape of the kanji character for "rice", reflecting both creativity and a sense of playfulness. As with all labels in the S Kaze no Mori series, the design celebrates the rich satoyama scenery surrounding the foothill brewery. This edition depicts the moment of dawn, as the rising sun gradually illuminates the landscape and morning mist transforms the monochrome darkness of night into vibrant color. Through this imagery, the brewery hopes even those who have never visited the brewery can experience the unique beauty of the land at daybreak.
