“S Kaze no Mori” is born from concentrating the charm of terraced fields and satoyama landscapes, along with the energy held within the land itself, into a single bottle. This release uses the sake rice “Akitsuho,” cultivated by Mr. Sugiura in the Minami area without pesticides or chemical fertilizers and harvested in 2024.
The Minami area lies at a lower elevation than the foothill brewery, with rice fields that are narrow and elongated terraced plots rather than highly productive farmland. Rice cultivation relies solely on mountain spring water, without the use of irrigation systems. As a result, the harvested Akitsuho expresses layered flavors with remarkable depth, showcasing a highly distinctive character.
