Fresh and transparent aroma with a cooling sensation, gently accompanied by the sweetness of aged Kyoho grapes; the palate is clear and crisp, accented by pleasant acidity for a refreshing finish. Founded in the Edo period, the brewery uses ultra-soft water from the in-house Ryujin well. Following a flexible, innovative philosophy, experienced in-house toji oversee meticulous handcrafting. Using premium sake rice varieties like Yamada Nishiki, Omachi, Gohyakumangoku, and Aiyama, the brewery carefully expresses each rice’s character, aiming for a rich umami style.

The brewery values traditional brewing techniques and human sensitivity. The essence of “handcrafted sake” lies not in the number of steps but in careful attention at critical points. While adhering to tradition, they continuously explore new methods and creativity to craft higher-level, more attractive sake.
