This rare limited bottling, Nichinichi Kairyoshinko, is also from Nichinichi Jozo in Kyoto. Brewed with Akita-grown Kairyoshinko rice provided by Aramasa Shuzo—the brewer behind the iconic “No.6” and a close partner of Nichinichi—it embodies the unique character of this historic variety. Descended from the Takanenishiki line and considered a sibling to Miyamanishiki, Kairyoshinko is one of Aramasa’s key rice varieties. Here, combined with Nichinichi’s distinctive brewing style, it becomes a finely crafted, characterful sake. Not produced every year, it is a rare release worth seeking out.
