This release is the “Zeroshiki” namazake version, a modern-style seasonal limited unpasteurized sake available only at this moment. As the core expression of the “Edo-Gaeri” concept, it features a low alcohol content of 13%, delivering a fresh and refreshing palate with bright acidity, while still offering a firm and deeply layered umami.
“Edo-Gaeri” means viewing the present through the lens of Edo—learning from the past to create something new. As one of the three pillars of Edo-Gaeri—Modern, Retro, and Classic—the newly evolved “Modern” style fully adopts kimoto brewing, bringing together all contemporary elements. Its ingredients and expressive vocabulary are built around four styles, all bottled immediately after pressing, with both seasonal namazake and pasteurized versions released. According to the season, four expressions are offered: “Zeroshiki” Namazake, “Ichishiki” Hiire, “Nishiki” Origarami, and “Sanshiki” Sparkling Genshu.
