Named “Noon Crescent,” this sake was crafted with special consideration for easy drinking during the hot summer season. The initial aroma carries a soda-like nuance, while the palate is light, smooth, and silky, revealing a pear-like fruitiness. The flavor shows a gentle sweetness, with faint astringency and bitterness lingering in the aftertaste. As the bottle rests for a few days after opening, the sweetness gradually softens the astringency, resulting in a more harmonious integration. Koueigiku’s new release “Noon Crescent” marks the brewery’s first use of Ginpu sake rice, presented as a lightly cloudy sake.
