A miracle born from the intersection of three timelines, this sake expresses a complex and truly one-of-a-kind flavor. The aroma reveals layers of vanilla from oak aging, intertwined with banana-like fruit notes and the signature ginjo fragrance unique to Japanese sake. On the palate, you’ll notice Kaze no Mori’s characteristic fine effervescence — despite its 19% alcohol content, it maintains a clean and elegant texture. The taste is deep and weighty yet captivatingly intricate, while the finish is silky and graceful.

Created through the overlap of three stages of time, this sake represents Kaze no Mori’s vision of the future of Japanese sake. Brewed in Gose City, Nara Prefecture, this special limited edition — Future Forecast Sake III: Overlapping Times Trio — marks the third chapter of a 25-year brewing vision, themed “The Harmony of Time.”

By blending multiple brewing philosophies from Yucho Shuzo’s long history, the result is a completely new sensory experience. The moto (yeast starter) was crafted using traditional Muromachi-era techniques derived from their aged sake “Mizuhana.” In mid-fermentation, a rice shochu aged over ten years in oak barrels, “Hinotori (Phoenix),” was added, along with “Takacho,” a ten-year aged sake that symbolizes the brand. Finally, it was finished in the style of kijoshu — sake brewed with sake instead of water.
