This Junmai sake is brewed using both yellow koji traditionally used for Ginjo sake and white koji, and is carefully fermented with the brewery’s own No. 8 house yeast preserved at the Kariho brewery. The white koji contributes a refreshing citrus-like acidity, which is beautifully balanced by a moderate and gentle sweetness, creating a crisp yet layered flavor profile.
