The aroma reveals elegant notes of green apple, pear, and apricot accented by a gentle lactic nuance, while subtle hints of green olive contribute a faintly oily layer of complexity. On the palate, fine and lively micro-bubbles provide a refreshing lift as delicate sweetness and graceful, juicy fruit flavors unfold gradually. The character is reminiscent of the refined elegance of a traditional Yamato Nadeshiko—poised, balanced, and understated. Although the sake possesses a soft and generous umami core, it never feels heavy, maintaining excellent balance throughout. A refreshing ramune-like quality runs through the palate, leading to a pleasant and lingering finish. Rather than serving it ice-cold, allowing the sake to warm slightly reveals its fuller texture, gentle roundness, and refined complexity, making it an ideal bottle for relaxed and thoughtful enjoyment.

This Nakagumi (middle-run) expression from the limited-distribution Shichiyo series is brewed using locally contracted Gohyakumangoku rice from Kyoto Prefecture. Through a carefully managed long-term, low-temperature fermentation process, the brewery has crafted a sake that highlights both elegance and precision while fully expressing the character of the rice and region.
