Bottled with natural carbonation from fermentation, this sake delivers a vivid burst of effervescence at first sip, while showcasing the juiciness and richness unique to Omachi rice.
“Kagami Gokoro Jikou Jijo” is normally released in pasteurized form, but this version is specially bottled as a nama genshu (unpasteurized undiluted sake), produced only once a year and available strictly by reservation.
“Jikou Jijo” means “self-cultivation, self-brewing,” and the Omachi rice used here is grown in Yakage, Okayama, cultivated jointly by Shun Family Farm and the brewery.
The label was designed by renowned calligrapher Suitou Nakatsuka, who won both the Gold Award and Jury’s Gold Prize at the “Societe National des Beaux-Arts 2016” at the Louvre in Paris, and later created the title lettering for the 2020 NHK Taiga drama Kirin ga Kuru. The pentagon symbol below reflects the philosophy of the five elements, representing the interconnectedness of all things, while the vertical band on the left depicts the “Mitsu-yama” (three mountains) of the Seto Inland Sea. This sake embodies deep gratitude and pride toward Okayama.
