When poured into a glass and gently swirled, it emits a subtle aroma of grapes and vanilla. While not overly extravagant, it offers a pleasant and refreshing sensation. The initial entry is slightly viscous but smooth and flowing, revealing a delightful acidity that maintains a well-balanced freshness. There's a delicate melon-like fragrance, with fruit notes akin to a smooth cantaloupe, accompanied by a pleasing sweet-tart taste. The name "Juyondai Honmaru" derives from the addition of the 14th generation's homemade pure rice lees shochu during production, a technique kept as an exclusive trade secret. The term "gyokushu" refers to diluting the sake and water in equal proportions, while "Hiden Gyokuhen" signifies the further addition of secret alcohol to the already diluted Japanese sake, essentially "returning" or "restoring" the "gyokushu", hence the name "Hiden Gyokuhen" . This sake employs the unique feature of using homemade pure rice lees shochu from the 14th generation, a rarity nationwide, setting it apart distinctly from other Japanese sake.
