This sake is brewed using the new sake rice variety “Shinko Sake No.557 (Yumeminishiki),” developed by the Nagano Prefectural Agricultural Experiment Station. When poured into a glass, it releases a fresh green apple-like aroma. On the palate, elegant sweetness and umami spread gently alongside a pleasant acidity, leading to a clean, crisp finish that encourages sip after sip.

In Japan, unowned cats are commonly referred to as “stray cats,” while in Italy they are called “free cats”=Gattolibero, symbolizing the freedom to choose where to live according to their own will. The “Juku” series shares this philosophy of freedom, which is why it adopts the name Gattolibero. Additionally, labels in the “Juku” series typically incorporate the number “19,” but this time only the number “6” appears, as a tribute to Kyokai No.6 yeast—the oldest existing yeast strain still in use today.
