Using the top-grade sake rice "Yamada Nishiki" from the special A region of Hyogo Prefecture, it is polished to a high percentage. The highly polished sake rice is combined with spring water from the underground river of the famous Oi River, sourced from the Southern Alps mountains, and undergoes a slow fermentation process at low temperatures in a refrigerated storage room, characteristic of Ginjo brewing.
