A faint yellow tint can be observed when poured. The palate begins with gentle umami and a dense sweetness with a syrup-like texture, followed by the characteristic acidity of Kimoto, creating a soft, light, and pleasant drinking experience. It is highly recommended to savor its evolving flavors after opening. Past collaboration editions have shown remarkable evolution, so expectations for this release remain high.
This sake is brewed using “Sasanishiki” rice cultivated through natural farming in Ogata Village, Akita Prefecture, and produced with the Kimoto method at Tsuchida Shuzo in Kawaba Village, Gunma. This time, special focus was placed on pre-Association No.6 yeasts, using Association No.5 yeast.
