The palate is clean, crisp, and on the dry side, showcasing the refined richness unique to the kimoto method along with a subtle fruity aroma within its sharp profile, creating a new expression of dry sake. The brewery’s producer, Yutaro Mori, also highly recommends enjoying it mixed with soda at a 1:1 ratio for a distinctive twist.
Kimoto island sake “Hiran Black Jack.” This release, described as a “fruity dry sake—like fruit without sweetness,” is presented in its first seasonal batch as an origarami-style namazake with a slight presence of lees.
