This sake has a relatively mild aroma, with a refreshing lactic note. Its taste is refreshingly smooth and juicy, with a rich sweetness and a creamy umami from the sake lees. The round, pear-like fruitiness melds smoothly with a refreshing acidity for a delightful experience.

After opening, it is recommended to gradually enjoy the sake over a period of 1-2 weeks, or to store the unopened bottle in the refrigerator for several weeks to 3 months for a richer flavor.

Koueigiku Shuzo, which had temporarily closed in 2006, has been revived under a new structure in 2019. Under the leadership of new owners, Tohru Yamamoto, the toji (master brewer), is creating new history.

This "Hello! Koueigiku Omachi" is an unpasteurized, unfiltered nama genshu (undiluted sake) made from Omachi rice, grown in Okayama Prefecture. This sake is bottled with a "usu-nigori" or "lightly cloudy" style.
