Harukasumi upholds a philosophy of meticulous care—“one brew at a time”—devoting full attention to every batch. In recent years, small-scale brewing of around 1,000 kg per batch has increased. Koji is made using the box-koji method, and after pressing, the sake is bottled and aged for storage. Although the process is complex and labor-intensive, the goal remains consistent: to brew gentle, food-friendly sake. Another rare feature within Akita Prefecture is that all brewers are local residents of Misato Town, and in summer they personally engage in rice cultivation, participating in sake brewing from the very source.
