The "Katsuyama-style" sake has a gentle aroma and a refreshing taste, with an elegant flavor and mild drinking sensation. It has a rich and transparent quality, showcasing the characteristics of Orihime (Vega); it elevates the flavors of various dishes. Recommended pairings: Japanese, Western, and Chinese appetizers (such as dashi jelly).

The "Suminoe-style" sake features a refreshing aroma and a good finish, embodying the characteristics of Hikoboshi (Altair). It has a solid and deep body with an elegant flavor, and its crisp finish pairs excellently with seafood. Recommended pairings: fatty fish (sashimi/salt-grilled/sushi).

"DATE SEVEN" is a project by seven young breweries from Miyagi Prefecture who collaborate to further improve brewing techniques and quality. They change roles each year and brew limited sake with different themes over seven years. The project's goal is to create sake that can lead the future mainstream, set trends, and be globally recognized. Instead of just improving traditional sake, they challenge the brewing process through broader re-examinations and new attempts.

Although the project reached its final chapter in 2021, they relaunched it as "DATE SEVEN SEASON II" to expand into the national and international markets.

This time, the division of tasks among the breweries is as follows: ingredient processing by Hagino Shuzo from 'Hagino Tsuru,' yeast starter by Yamawa Shuzoten from 'Yamawa,' koji by Kawakeishouten from 'Koganezawa,' mash by Saura Co., Ltd. from 'Uragasumi,' and pressing by Niizawa Sake Brewery from 'Hakurakusei.' Using Yamada Nishiki from the special A district of Hyogo Prefecture, polished to 45%, and employing Miyagi yeast, they fully showcased the unique flavor of Katsuyama, the leading brewery, creating this Junmai Daiginjo Genshu.

The bottle design of "Katsuyama-style" is inspired by the Tanabata tanzaku and the Milky Way on July 7th, as well as the Izumi-Gaku standing in front of Katsuyama Brewery. Additionally, the bottle hides 7 elements waiting to be discovered.
