This Honjozo sake carries a quiet and restrained flavor. The tall chimney and red brick architecture are the symbols of Takahashi Shuzo. The brewery, built in 1922 (Taisho 11), features a red brick brewing storehouse and a distinctive hexagonal chimney. It has withstood major disasters such as the Nagaoka air raid in 1945, the Niigata Earthquake in 1964, and the Chuetsu Earthquake in 2004, and despite sustaining damage, it remained standing. In January 2007, it was registered as a National “Tangible Cultural Property.” The sake of Takahashi Shuzo is crafted by hand, using locally grown high-quality rice, abundant and excellent brewing water, and the severe snowy winters of Echigo. Under the leadership of the renowned Echigo Toji and with the dedication of the kurabito (brewery workers), they continue to brew with great care. The brand name “Choryo” comes from the ancient name of Echigo Nagaoka, as the area was once called so.
