The overall profile is shaped by a bright and lively acidity, symbolizing the excitement of a new season. This is followed by a gentle sweetness reminiscent of a spring breeze, derived from the four-stage brewing method. While maintaining depth and layered umami, it remains irresistibly drinkable—thanks to the use of moromi genshu and an intentionally designed alcohol content of 14%, which reduces heaviness and creates a lighter, smoother texture.
From Banshu Ikken comes the spring-recommended “Spring Shine.” Inspired by the brilliance of spring sunlight, this sake incorporates a fresh and radiant seasonal character into its flavor. With the brewery’s recent upgrade and introduction of the “Gravity System,” delicate natural effervescence is preserved, while enhancing clarity and a silky mouthfeel, resulting in a cleaner and more elegant drinking experience than before.
The so-called Gravity System refers to a method in which, after pressing, the sake is not collected in a receiving vessel nor transferred using pumps. Instead, it is guided solely by gravity directly into containers below, and then bottled the following day in a clean environment. This process minimizes stress on the sake, allowing its natural and pure flavors to be expressed in the bottle to the fullest.
