“Aramasa Rokugo Junmai Daiginjo” is brewed by Aramasa Shuzo in Akita City. Once a large-scale producer focusing mainly on affordable, mass-market sake (to put it bluntly, almost a quasi-major brewery), Aramasa dramatically shifted its brewing philosophy after the return of the owner’s son, Yusuke Sato. Beginning with brewing year Heisei 19 BY, the brewery entered an entirely new era.
This sake is brewed using “Association Yeast No. 6” and Akita-grown rice, following the orthodox kimoto method. The rice is highly polished and brewed to Junmai Daiginjo standards. After being brewed in 2009, it was pasteurized in the bottle and aged long-term at low temperatures, resulting in a refined yet deeply layered flavor.
