What “Shunyo” expresses is an aroma reminiscent of muscat grapes. This is a sparkling sake with a rich fragrance and a light, refreshing character. With an alcohol content of only 11%, it is smooth and easy to drink, making you want to enjoy glass after glass!

Brewing sake with “Shunyo” is actually quite a challenge. Normally, the aroma of sake can mostly be controlled by the yeast used. However, “Shunyo” is different — its aroma does not mainly come from the yeast, but is strongly influenced by the characteristics of the rice itself, resulting in a unique aromatic profile distinct from traditional paths.

What makes it even more difficult is that the quality of “Shunyo” rice fluctuates greatly depending on the year. In some years, brewing can yield abundant aroma, while in the following year, even with the exact same process, the aroma may hardly show at all. After years of exploration, we finally established a stable system to secure and produce “Shunyo.” The brand-new product “DENEB” is a creation realized on the foundation of our established brewing blueprint.
