Compared with the standard pasteurized Junmai Ginjo, this release offers a softer and more refined sweetness, complemented by refreshing and pleasant acidity. The palate is delicate and smooth, revealing a mellow and harmonious character developed through maturation. The rich umami of Aiyama is beautifully balanced by the lightness of Akita Sake Komachi, giving the sake impressive depth without becoming heavy. Designed with food pairing in mind, this seasonal limited release reaches its ideal drinking condition in early autumn and pairs particularly well with a wide variety of seasonal autumn dishes.
“Yukinobijin Junmai Ginjo Aiyama Koji Hiyaoroshi,” a local sake from Akita, is a limited seasonal “Akiagari” release created specifically for autumn. Unlike the standard Junmai Ginjo, which uses Misanishiki as the koji rice, this Hiyaoroshi is specially brewed with Aiyama as the koji rice, skillfully combining the richness brought by Aiyama with the lighter character of Akita Sake Komachi. The sake is bottled and pasteurized in late March, then stored under refrigeration for approximately five months. Through slow maturation over the entire summer, the sake gradually develops a beautifully rounded, soft, and harmonious character.
