After maturing throughout the entire summer, the sake develops soft, rounded umami while retaining the powerful, crisp finish characteristic of an extra-dry style, allowing it to complement the rich flavors of autumn cuisine beautifully. It can be enjoyed across a wide range of temperatures, from thoroughly chilled to gently warmed. When well chilled, its refreshing character and sharp, clean finish become especially pronounced, while at room temperature or warmed, the mellow rice umami developed through summer maturation unfolds more fully, creating a richer and more generous flavor profile. It pairs particularly well with seasonal autumn dishes such as salt-grilled Pacific saury and mushroom cuisine, allowing the evolving interplay between crisp extra-dryness and matured umami to be appreciated at different serving temperatures.
This is an autumn-limited extra-dry Junmai sake brewed by Matsuura Sake Brewery in Ishikawa Prefecture.
