After maturing into autumn, this sake develops the rounded texture and rich umami characteristic of the traditional Kimoto method, accompanied by a juicy and generous fruit character reminiscent of fully ripened red-fleshed melon. Rich yet gentle and profound, it is an ideal Junmai sake for slow enjoyment during autumn, allowing the drinker to experience Miwa Sake Brewing’s history, natural surroundings, and distinctive brewery character through its ripe, juicy fruit expression and the depth of Kimoto brewing.

“Shinrai Akiagari Kimoto Junmaishu” is brewed by Miwa Sake Brewing in Jinsekikogen, located in the Chugoku Mountains of Hiroshima Prefecture. Founded in 1716, the brewery has a history spanning more than 300 years. Hiroshima sake is traditionally renowned for brewing with soft water, while Shinrai skillfully utilizes both mineral-rich hard water and soft water nurtured by the Chugoku Mountains, taking advantage of their different characteristics to create sake that reflects the local terroir. This sake is brewed using the traditional Kimoto method established during the Edo period, in which naturally occurring microorganisms that have inhabited the brewery environment for generations participate in the development of the yeast starter. As a result, the finished sake offers an even more distinctive expression of the brewery’s natural surroundings and climate.
