Brewed with a 70% polishing ratio and designed at a relatively low alcohol level of 14%, this sake preserves the distinctive character of the rice while remaining light and easy to drink. Compared with the namazake version, the pasteurized release offers a more integrated and rounded flavor profile, with rich umami unfolding gently across the palate. Despite being pasteurized using a pasteurizer, it surprisingly retains a lively effervescence, delivering fine and refreshing bubbles that rival even those of namazake. The profound umami of aged rice, modern low-alcohol design, and fresh delicate bubbles are skillfully combined, completely overturning expectations that five-year-old rice would produce a heavy and overly mature sake. Highly experimental and commemorative in nature, this is an exceptionally rare limited release that can truly be described as a “once-in-a-lifetime” sake.

“Osakazuki Junmai Kokokokokomai – 2020 Government Reserve Rice” is a highly distinctive limited release from Makino Shuzo’s popular “Osakazuki MACHO” series in Takasaki City, Gunma Prefecture. It is brewed entirely from Japanese government reserve rice harvested in 2020 and stored for approximately five years. With the release of government reserve rice coming to an end, this may be both the first and last time this extraordinary sake is produced. Generally, long-term stored rice is considered difficult to use for producing high-quality sake due to changes in its composition. However, through precise koji-making techniques and meticulous fermentation management, Makino Shuzo successfully overcame the challenges of brewing with aged rice and transformed its deep rice umami into a distinctive strength, challenging the conventional assumption that sake made from reserve rice cannot taste exceptional.
