According to the brewery, Oniyama Aka Oni Hiire is "a dry sake that tests one's resolve." Both the brewer and the drinker are challenged to confront its fierce, demon-like character head-on. Following the release of the Aka Oni Nama Genshu earlier in the year, this version arrives as the second release, presented in a pasteurized (Hiire) style. Immediately after pressing, the sake undergoes pasteurization and is then matured for an extended period at low temperatures, allowing the flavors to become rounder and more substantial. Despite the Hiire treatment, the palate still retains a subtle sense of liveliness and stimulation, expressing an ultra-dry style with exceptional weight and presence. Given its powerful structure and concentrated flavor, the brewery even suggests serving it thoroughly chilled or adding a small amount of water according to personal preference to discover different dimensions of its character.
