On the palate, gentle and subtle acidity creates a fresh, natural sensation that blends effortlessly into the mouth, resulting in a comfortable yet distinctive drinking experience. Fermentation with wild yeast presents considerable brewing challenges, but through this ambitious approach, the sake brings together microorganisms, water, and rice nurtured by the land of Aomori in a single bottle. Restrained fruit aromas, light acidity, and a refreshing texture combine to express the uniquely serene character of “Utsuroi.”

This sake is brewed with wild yeast and lactic acid bacteria collected from the Hakkoda Mountains, underground water from the Oirase River, and rice grown in Aomori Prefecture. From microorganisms and water to rice, every element is rooted in Aomori, allowing the sake to express the natural terroir of the region. It is intended to be enjoyed alongside the changing seasons, revealing different expressions as the year unfolds. “It was a beautiful sea. Perhaps we will never encounter exactly the same scenery again. Everything in this world is constantly changing, and we are grateful to have encountered this moment.” The photograph on the label carries this memory of a fleeting landscape, inviting drinkers to experience, through both the image and the sake, a passing moment shaped by nature, the seasons, and the flow of time.
