The sake opens with a lively and delicate natural effervescence, accompanied by a fresh and refreshing aroma, moderate gentle sweetness, and a cool, crisp finish, creating a light yet beautifully layered flavor profile. Designed primarily as a food-pairing sake, it works almost like a seasoning that enhances a dish, pairing effortlessly with Japanese, Western, and Chinese cuisine. Its evolving character can also be enjoyed as the serving temperature changes and as the sake gradually opens up after the bottle is uncorked.

“Muso,” a limited brand created by Toji Shu Hirata of Taiyo Sake Brewery, is brewed using Niigata Prefecture’s premium sake rice “Koshi Tanrei” together with Niigata Ginjo yeast. The series has attracted attention for its innovative “New Niigata Tanrei Karakuchi” style. The fourth release in the series, the summer-limited “Shinsei,” makes its debut with a focus on refreshing, mineral-driven acidity, creating a sake perfectly suited to the heat of summer.

The subtitle “Shinsei” is inspired by the summer Zen phrase “Shin Shizuka Nareba Sunawachi Mi Suzushi,” expressing the idea that when the mind is calm, the body naturally feels cool and at ease. This sense of summer tranquility and refreshing comfort is reflected in the sake itself, resulting in a seasonal release that combines freshness, elegance, and depth.
