On the palate, the initial impact is gorgeous and juicy; within the gentle sweetness, a youthful, delicate bitterness subtly emerges, before being softly wrapped by elegant acidity and finishing cleanly. When the sake is gently shaken together with the fine lees, its newborn-like freshness becomes even more pronounced, revealing lively herbal notes and an even more energetic juiciness, making the overall profile brighter and more vivid.
Based on the “Edo Revival” philosophy officially launched in November 2024, this is the “Hatsuzo” release from the “Senkin Modern” series. The first tank of December was drawn directly from the press, with three expressions released simultaneously: Arabashiri, Nakadori, and Seme.
This bottle is the “Arabashiri,” featuring fine sake lees.
