The sake offers a soft and delicate citrus aroma. On the palate, it is smooth and gentle, with elegant floral notes and richly layered rice umami gradually unfolding, followed by the refined acidity characteristic of the Bodaimoto method, which extends naturally to create a multidimensional and deeply expressive flavor profile. Sweetness and acidity are beautifully balanced, giving the sake a light and delicate mouthfeel while retaining impressive depth and complexity. The finish is refreshing and crisp, making this a commemorative release that beautifully expresses the terroir of Nara, traditional brewing craftsmanship, and the appeal of a new generation of sake rice.
“Mimurosugi Bodaimoto Nanatsuyu” is a limited release from Mimurosugi, one of Nara Prefecture’s renowned sake brands, brewed using “Nanatsuyu,” a newly developed original sake rice variety from Nara. As the first sake-brewing rice variety independently developed by Nara Prefecture, the birthplace of Japanese sake, Nanatsuyu has been officially available to breweries within the prefecture since 2025. Inheriting the distinguished lineage of Tsuyuhakaze, Yamada Nishiki, and Gin no Sato, it represents a new generation of Nara-grown sake rice. This release also incorporates the traditional Bodaimoto brewing method, which originated at Shoryakuji Temple in Nara and has a centuries-old history. By bringing together an innovative new sake rice with an ancient brewing technique, the sake symbolizes the harmonious union of tradition and innovation.
