The sake presents a rich yet pure sweetness of umami, accompanied by a refreshing acidity reminiscent of gentle effervescence. The sweetness and acidity merge harmoniously, creating a lively and layered drinking experience.
This sake comes from a top-class label that won the Champion Sake title in the SAKE category at the IWC 2021 (International Wine Challenge), achieving the highest honor among 1,499 competing entries. This bottle is the fresh nama (unpasteurized) new sake version of the award-winning brew. It is made with “Sankei Nishiki,” a new sake rice variety officially registered in Nagano Prefecture in 2017, polished to 50%, and belongs to the Mikotsuru Junmai Ginjo series.
At present, this rice variety is still mainly used by breweries within Nagano Prefecture. Its characteristics include a large shinpaku (starch core) and low amino acid content, and it is regarded as a highly promising next-generation sake rice.
