The sake has a pale yellow hue and offers the natural rice aroma characteristic of a low polishing ratio. On the palate, it has a satisfying fullness and rich rice umami, yet quickly tightens into a crisp and precise finish. Rather than relying on intense aromas or pronounced sweetness, it expresses a clean, straightforward, and classic dry style. Its refreshing, crisp finish naturally complements food without overpowering the flavors of the dish, making this a limited-edition sake that returns to the fundamentals of Japanese sake while fully expressing the essential character of rice and excellent food-pairing versatility.

“Meikyoshisui Bungetsu Jimoto Motai San Sankei Nishiki” is brewed using “Sankei Nishiki,” a premium sake rice cultivated in the Motai area of Nagano Prefecture. For the first time in the history of Meikyoshisui, the brewery has challenged itself with an 80% polishing ratio, using minimal rice polishing to fully express the rice’s pure and substantial umami. The name “Bungetsu” refers to tillering, an important stage in rice cultivation when additional stems emerge from a single rice plant, increasing the number of grain-bearing panicles. The name also embodies the brewery’s hope that the care devoted to cultivating Sankei Nishiki from planting through harvest will spread to more people, just as a rice plant expands through tillering. Brewery staff even personally participated in planting and cultivating part of the rice used for this sake, contributing to its creation from the fields onward.
