From the renowned Nara-based brewery Kaze no Mori comes this irregularly released limited edition, Tsuyuhakaze 807 Zarumidori. It uses the sake rice “Tsuyuhakaze,” contract-grown by the agricultural cooperative “Hotaru no Sato” in Mitsue Village, Nara Prefecture, polished to 80%, and drawn using the special Zarumidori technique. Zarumidori is an innovative sake-drawing method developed by Yucho Shuzo, inspired by documents from the Muromachi to Edo periods. A finely meshed basket-like sieve is submerged into the fermenting mash, allowing sake to separate naturally from the moromi with virtually no pressure and minimal oxygen exposure. This groundbreaking technique captures the pure essence of freshly born sake. Its flamboyant expression is rare, and with extremely limited production, it is all the more precious.
