Typically, Kaze no Mori uses yeast number 7. However, this ALPHA 6 sake uses a special yeast strain from Shinsekai Sake Brewery's "No.6" super-premium sake. The rice used for this sake is Nara's Akitsuho, polished to 66%, which symbolizes the number "6". In consideration of the simple and high-quality flavor of the 6th generation yeast, white koji is used in conjunction to produce the rich flavor of Kaze no Mori . White koji is different from the yellow koji typically used in sake, as it has the property of producing citric acid.

The significance of the "ALPHA" series is to transcend the traditional framework of Kaze no Mori and explore new possibilities for Japanese sake through innovative techniques from various angles, with a more innovative and innovative approach. Kaze no Mori's series no longer uses specific names such as "Junmai" or "Junmai Ginjo"; instead, they use "Junmai Nara Sake" to represent their products and express their polishing rate and yeast used.
