Brewed in Gose City, Nara Prefecture, this special limited edition — Future Forecast Sake III: Overlapping Times Trio — marks the third chapter of a 25-year brewing vision, themed “The Harmony of Time.”
By blending multiple brewing philosophies from Yucho Shuzo’s long history, the result is a completely new sensory experience. The moto (yeast starter) was crafted using traditional Muromachi-era techniques derived from their aged sake “Mizuhana.” In mid-fermentation, a rice shochu aged over ten years in oak barrels, “Hinotori (Phoenix),” was added, along with “Takacho,” a ten-year aged sake that symbolizes the brand. Finally, it was finished in the style of kijoshu — sake brewed with sake instead of water.
