Unlike the vivid freshness created through in-bottle pasteurization, this sake displays a perfectly measured sense of maturation while showing virtually no pronounced matured aromas. A delicate touch of effervescence remains, adding lightness and vitality to the overall profile. Omachi is used for the koji rice, while Nakate Shinsenbon is used for the kake rice, with the latter polished using the original-shape rice polishing method to create an even smoother, more refined texture and a beautifully long finish. When thoroughly chilled, the sake is light, refreshing, and exceptionally easy to drink. As the temperature gradually rises in the glass, the flavors begin to open, with rice umami and acidity slowly integrating as the body becomes fuller and more profound. Starting at a lower temperature and allowing the sake to warm naturally therefore reveals its many different layers and expressions. Calm yet never heavy, its gentle umami, acidity, and lightness remain beautifully balanced, making it effortlessly enjoyable glass after glass. This is an autumn food-pairing sake that naturally complements the seasonal dining table while fully expressing the distinctive style of Kamokinshu.
“Kamokinshu Tokubetsu Junmai Akiagari Yorisoi Akiaji” is a seasonal autumn release from Kamokinshu. Using a pasteurization method different from that employed for the brewery’s regular expressions, the sake develops the calm and rounded character distinctive of “Akiagari” after a period of careful maturation.
