On the palate, this sake first reveals a subtle wooden-barrel character and gentle sweetness, followed by bright, crisp acidity reminiscent of green apple that gradually emerges and tightens the overall flavor profile. Despite its pronounced and powerful acidity, the body remains light and fluid, making it an excellent food-pairing sake for the warmer months. It also reveals fascinating changes at different serving temperatures. When thoroughly chilled, the sharp and refreshing character of malic acid becomes particularly prominent, creating a cool and invigorating impression. As the temperature gradually rises to around 15°C, the sweetness and acidity become more integrated, while the body develops greater roundness, richness, and complexity. Malic acid is especially expressive at lower temperatures, so it is recommended to begin with the sake well chilled and then allow it to slowly warm in the glass, enjoying the evolving interplay of sweetness, acidity, and subtle wooden-barrel aromas.
“Kamokinshu Reisan Omachi 60” is a special sake brewed in a precious wooden barrel, offering a refreshing combination of sweetness and acidity. It is a newly reinterpreted version of the previously popular release “Kioke de Umareta Ringo-san.” The sake is brewed using Kyokai No. 77 yeast, known for producing abundant malic acid, together with a treasured wooden barrel that has been preserved and used by the brewery for more than 20 years, and Omachi rice cultivated by the brewery staff themselves.
