Breaking free from conventional frameworks, it presents a peak expression of flavor achievable at this stage. This edition uniquely uses “Karabana” (a native Japanese plant closely related to hops), traditionally used in parts of Akita in the ancient “Hanamoto” nigori brewing method, passed down through folk practices. Centered on this rare traditional technique, the sake deliberately simplifies its ingredients to just rice, rice koji, and Karabana, pushing their potential to the limit.
