This “Rice & Apple” is co-fermented with grapes, rice, and rice koji, and as part of this SPECIAL EDITION, it has been aged in oak barrels and released in limited, numbered quantities.
The sake blends the sweet and tart characteristics of fruit with the gentle sweetness of rice and the subtle bitterness of koji, further enhanced by a hint of almond-like flavor, resulting in a rich and distinctive profile. Within the same series, “Rice & Apple” fully utilizes the flexibility of the craft sake (other brewed alcohol) license, fermenting the “Beni no Yume” apple—commonly used in Japanese cider production—together with rice and koji to create a completely new flavor experience. This special edition has been further matured in oak barrels, produced in very limited quantities with individual numbering.
