Although the numerical profile indicates a dry style, the palate still reveals a clearly defined, gentle yet substantial sweetness. Sweetness, umami, and the crisp dry finish are skillfully balanced, fully showcasing the exceptional brewing craftsmanship of Toji Tetsuya Doi. As this release was brewed only once in a very small limited batch, it is a rare and precious sake that fans of Houken and “Sakemirai” should not miss.
“Houken Junmai Ginjo Sakemirai” is an exceptionally rare, one-time limited release produced in only a small batch. It is brewed using the rare Yamagata sake rice “Sakemirai,” with this particular allocation of rice personally obtained by Houken’s Toji Tetsuya Doi from the prestigious Takagi Shuzo, a senior brewery with whom he shares a longstanding connection. The rice is polished to 50%, and after brewing, the sake is matured at low temperature for approximately one year, allowing its aromas and flavors to gradually integrate and develop into a delicate, mellow expression.
Its style lies beautifully between the delicate purity expressed by Houken’s “Hattan Nishiki” and the rich, graceful character of its “Yamada Nishiki.” It combines clean, crisp definition with rounded, abundant umami and elegant complexity.
