The aroma is rich and elegant, offering delicate fruity notes. On the palate, it is smooth and refined, with full yet pure rice umami intertwining beautifully with Hitakami’s signature polished dry style. A perfectly balanced acidity adds depth and dimension to the body, creating an exceptionally clean, crisp, and elegant overall profile. The finish carries Hitakami’s hallmark refreshing dryness, making the sake fresh and easy to drink while retaining impressive depth and complexity.
Hitakami, a highly acclaimed sake from Miyagi Prefecture, presents the special limited-edition “Nakadori Junmai Daiginjo Flow Chart Label,” created in collaboration with Tomita Shuzo, the brewery behind Shiga Prefecture’s renowned Shichihonyari. Inspired by Shichihonyari’s popular “Process T-Shirt,” the collaboration incorporates illustrations of the sake brewing process into the label design, allowing drinkers not only to enjoy the sake itself but also to learn more about the brewing process through the label, adding both an entertaining and collectible dimension. This sake is brewed with Yamada Nishiki grown in the Special A designated area of Yokawa-cho, Miki City, Hyogo Prefecture, polished to 40% and carefully fermented using Miyagi yeast. Only the finest “Nakadori” middle portion of the sake obtained during pressing is bottled, resulting in a luxurious Junmai Daiginjo that combines exceptional aroma and flavor.
This special collaboration edition is a one-time-only release. It can also be tasted alongside the simultaneously released “Shichihonyari Junmai Tamae Jikagumi Hiire Process Label” to compare and appreciate the distinctive brewing styles of these two prestigious breweries. Combining an intriguing concept, collectible appeal, and an exceptional drinking experience, this is a rare and highly desirable limited-edition sake.
