The finished sake has a relatively restrained aroma, yet the palate reveals fresh citrus notes reminiscent of lemon, accompanied by the vivid acidity derived from citric acid. Rich and complex umami coexists with a refreshing, crisp finish, creating a style that offers both depth and lightness with clearly defined layers. It is particularly enjoyable well chilled during the warmer months. Pairing it with dishes such as fried chicken finished with freshly squeezed lemon further highlights its citrus-like acidity and refreshing finish.

The third release, “γ-type,” takes on an “unknown puzzle” composed of multiple unexplored elements, combining unprecedented ingredients and brewing methods to explore entirely new possibilities for Hiran. Nikomaru, a rice variety the brewery works with throughout the year and understands particularly well, is used as the kake rice, while the team explores its ideal pairing with Omachi. The brewery then introduces a combination it had never previously attempted—“White Koji × Kyokai No. 12 Yeast”—bringing together various ideas the brewing team had long wanted to experiment with in a single creation.
