Although the acidity of the finished sake is more pronounced than initially expected, it is not as intensely sharp as imagined. Instead, it presents a sweet, tart, and juicy character reminiscent of fresh apples. Its acidity is somewhat similar to that produced by white koji, yet it is softer, lighter, and more refreshing. Crisp apple-like aromas intertwine with vibrant acidity, complemented by a pleasant and delicate effervescence, creating a bright and juicy palate. The result reveals a refreshing character distinctly different from Hiran’s classic expressions.
The second release explores an unprecedented “unknown acidity” through the use of a high malic-acid-producing yeast. Malic acid is primarily found in fruit and is characterized by its juicy, refreshing acidity. Such a vivid expression is relatively uncommon in sake, leading Hiran to experiment with this yeast and explore what new style could emerge when malic acid combines with the sake’s existing acidity.
